Healthier Bacon and Eggs

6 slices high quality streaky bacon

6 large eggs

2 finely chopped spring onions

1 tsp smoked paprika

Chives to serve

 

  1. Preheat the oven to moderate 175 180C, (gas 4, 350F)

  2. Use a silicone muffin tray and line each one with baking paper

  3. Use the bacon to line the muffins – make a ring with two slices of bacon

  4. Bake in the oven for about 10 minutes or until the bacon looks crisp

  5. Meanwhile, crack the eggs in a large jug and add the spring onion and mix well

  6. Pour the mixture over the bacon baskets

  7. Dust each basket with paprika

  8. Bake in the oven for 25 minutes

  9. Garnish with the chives

 

This is not an every day breakfast but it is considerably healthier than the fast food version! Don’t be afraid of eating eggs, they have numerous health benefits – you could add some fresh chilli if you wanted an extra kick and serve with some roasted tomatoes and smashed avocado.
