New Potato and Spinach Salad

New potatoes cooked and cooled

Baby spinach washed, dried and chopped

Juice and zest of ½ lemon

8-10 tbsp natural yogurt

Tsp smoked paprika

 

  1. Chop the new potatoes in half length-ways

  2. Add the yogurt to a large bowl, add the lemon juice and stir well

  3. Add the chopped spinach to the yogurt then the potatoes

  4. Finish with a sprinkle of lemon zest and smoked paprika
