Pumpkin Spinach Feta Tart

Ready to roll puff pastry

1 pumpkin chopped and roasted

Bag spinach wilted

Block feta cheese crumbled

Kale pesto 

1. Roll out the puff pastry onto baking paper and roll up the edges to create a crust.

2. Wilt the spinach in a pan for 3-5 minutes.

3. Spread out the pesto over the pastry.

4. Add the roasted pumpkin, wilted spinach and crumbled feta.

5. Bake in the oven as per pastry instructions for approx. 20-30 minutes
