Healthy Valentines Truffles

2 cups jumbo Medjool dates, pitted

1 cup almond flour

1/4 cup chia seeds

1/4 cup flaxseed meal

1/4 cup cacao powder

1/4 cup agave syrup or maple syrup

2 tbsp almond milk 

Coatings (to roll in)

Cacao powder

Chia seeds

Almond flour

Unsweetened shredded coconut

  1. Place all ingredients into a food processor (aside from the toppings) and pulse into a sticky ball

  2. Remove and roll into small bite-sized balls

  3. Spread out your toppings and roll a few of the balls into each of the toppings to give you a nice truffle selection

  4. These will keep in the fridge for up to 7 days
