Almond Milk Pancakes

  • 1½ cups plain flour

  • 1 tbsp coconut sugar

  • 2 tsp baking powder

  • 1 and ¼ cups almond milk

  • 2 tablespoons olive oil

  • 1 egg

  • 1 tablespoon oil, to coat the pan

 

  1. Whisk together the flour, coconut sugar, baking powder and salt in a large bowl.

  2. Add milk, oil and egg. Whisk until smooth.

  3. Coat the pan with oil and heat it over medium heat.

  4. Pour the batter into the hot pan in batches.

  5. Let it cook until you start to see bubbles.

  6. Turn them over and continue cooking for 2 minutes.

  7. Transfer them on a plate and repeat the same steps with the remaining batter.

  8. Stack them on a plate and serve with Greek Yogurt and berries
