Banana Pancakes

3 bananas

1½ tsp ground cinnamon

1½ tbsp. almond butter

6 eggs

3 tbsp coconut oil

 

  1. Put the banana, cinnamon, almond butter and eggs in a blender.  Blend until well mixed and fluffy

  2. Place a large pan on medium heat and add the coconut oil.  Once hot slowly add the pancake mixture to the pan, don’t add all at once!

  3. When bubbles start to form on the surface flip the pancake and cook the second side

 

Suggested toppings: -

  • Berries

  • Chopped bananas and walnuts
